For the lemon vodka sorbetto, boil about 400 ml of water with sugar and lemon zest. Add lemon juice, vodka and white wine and freeze in an ice cream maker. Or pour mixture into a shallow tub and freeze, stirring repeatedly with a whisk.

Stir in lemon vodka sorbetto just before serving with egg whites whipped with sugar until creamy. The sorbetto should be nice and creamy and fluffy.
