Served with roast pork or roast poultry, this vegetable is an exceptionally tasty addition. It is also delicious with white bread.

Preheat the oven to 180 °C. Remove the skin from the quince, remove the core and cut the flesh into cubes. Rinse the sweet potatoes and potatoes, remove the skin and cut into large pieces.

Melt the butter and brush an ovenproof dish with it.

Put the quince, sweet potato and potato pieces into the mold. Pour the oil over it, stir well and season with salt and pepper.

Put the dish on the stove and cook the vegetables for about 45 minutes, stirring occasionally. In the last ten minutes, increase the heat to 200 degrees so that the potatoes take on a little color.
