Porkkanalaatiko can not be missing in Finland at Christmas. Also ideal for freezing.

Grind the soft boiled carrots. Then add to the cooled long grain rice cooked with salt water and milk, stir well. Add whipped cream, syrup and spices, season to taste. Stir and add the eggs. Sprinkle with breadcrumbs in the baking dish and bake for one hour at 175 °C.

Tip: Cook only with high-quality spices – they are the be-all and end-all in a good dish!
