Preheat kitchen stove to 180 degrees. Lightly grease four soufflé dishes with oil. Sprinkle bottom and sides with fine sugar, shake out excess sugar. Form a raised rim around each give of parchment paper and attach with kitchen twine. Lightly grease the paper. Boil apricots with orange juice, reduce heat and simmer until apricots are soft. Remove from heat and cool. Grind in food processor.

Whip egg whites with a hand mixer in a small, dry baking bowl until small peaks form. gradually add sugar. Fold the apricot puree into the stiff egg whites with a large metal spoon,

Fill into the ramekins and place on a baking tray. Bake for about 20 minutes until the soufflés are well risen and cooked through.

Remove the paper and serve on the spot sprinkled with sifted powdered sugar.
