Stir in sweetened snow, fill into buttered and sugared ramekins, cover with a few corners of the surprise egg and bake in a bain-marie on the stove. Caramelize the banana chips and the papaya slices in brown sugar, extinguish with white wine and simmer.
Arrange everything on a flat plate and garnish with mint leaves and cocoa powder.
