For the Japanese roast pork, peel and slice the onion and celery. Then fry in fat until brown and remove from the pan. Season the meat with salt and pepper and coat thinly with mustard.

Now sear the meat briefly on all sides. Then add the vegetables again and pour water over the whole thing. Put a lid on it and let it cook for about 1 hour.

Remove the meat from the pan and finely puree the celery, season a little more if necessary. Serve the roast pork with potato dumplings and sauce.
