For the quince cubes, peel and core the quinces, cut into pieces, cover with water and place in a pot. Add vanilla sugar and cook for about 40 minutes.

Remove the quinces from the juice and weigh them. Add the same amount of sugar and simmer over low heat for about 1 hour. Should reduce to a coral red paste, if there are still pieces, then it is best to puree.

Preheat the oven to 50 degrees, line a baking tray with baking paper and spread the mixture smoothly on it. Bake for about 1 hour, so the quince mixture will set faster.

Allow to cool, cut into random pieces. Roll in powdered sugar.
