For the spice bread, first sift the flour into a bowl, make a well and mix with yeast, milk and sugar to form a thick pre-dough. Cover and let rise for 15 minutes.
Knead with the remaining ingredients and let rise, covered, for 30 minutes. Place the dough in a buttered baking dish, brush with water and sprinkle with aniseed.
Bake the spice bread in a preheated oven at 190 °C convection oven for 40 minutes. Place a pot of water on the bottom of the oven.
