Instructions:

Season the veal kidney with fat coat well with salt and pepper. Brown on all sides in a hot pan and place in an ovenproof dish. Cook slowly in the preheated oven at approx. 100-120 °C for approx. 90 minutes. Cut veal kidney and serve with prepared mustard sauce. Sprinkle with capers if desired. For the mustard sauce, mix white base sauce with mustard. Mix into the remaining gravy and blend up.
