Preheat the oven to 180 °C.

Stir the yolks until they are nice and thick and creamy, about 5 minutes later add the sugar. Now fold in the flour, salt, water, baking powder, vanilla and lemon zest.

In another baking bowl, beat the egg whites with Cream of Tartar until they form peaks. Gently fold in the egg yolk mixture and pour the mixture into an ungreased cake pan (with center chimney). Bake for 60-65 min, when the cake is baked through, invert the pan over a bottle to cool.

Serve the cake pieces with fresh fruit and whipped cream respectively.
