For the rice casserole with sour cherries, first soak the rice with 2/3 of the sugar and a little salt in the milk for about 40 minutes.

In the meantime, preheat the oven to 160 °C and grease a baking dish.

Beat the egg yolks, butter, lemon zest and the remaining sugar until foamy. Stir in the curd cheese and lemon juice. Add to the rice and fold in the sour cherries. Beat egg whites with a pinch of salt until stiff peaks form. Fold the beaten egg whites into the mixture.

Pour into the baking dish and bake the rice casserole with sour cherries for about 30-40 minutes.
