Ingredients for 6-8 people:

Instructions:

* In a saucepan, bring the milk, butter and semolina to the boil with the vanilla bean split lengthwise, stirring to swell the semolina for a few minutes.

* Preheat the oven to 200 °C. Cool the semolina to hand heat, remove the vanilla bean, mix in the egg yolks and one egg white.

* Whip the remaining 4 egg whites in a large bowl until stiff, gradually adding the sugar. Butter a gratin dish and sprinkle with sugar.

* Fold the beaten egg whites loosely into the mixture and pour into the gratin dish. It should only be three-quarters full. Place the soufflé dish in a large saucepan filled with water at about 90 °C (of course, only enough to prevent water from flowing into the gratin dish). Carefully place in the oven and bake for 40 minutes.

* Sprinkle with powdered sugar before serving. In addition taste, depending upon season, briefly stewed plums or possibly apricots, in addition, frozen fruit such as raspberries or possibly berry mixture.

quickly together. If you like sweet main courses, serve the semolina souffle for 4 people.
