Grease a baking pan (approx. 32 x 39 cm, at least 3 cm deep) and dust with flour. Remove peel from apples, cut in half, core. Score a few times lengthwise on the curved side with a fork or score with a kitchen knife. Sprinkle with juice of one lemon.
Cream together shortening, 200 g sugar, vanilla sugar and salt. Fold in 4 eggs, one at a time. Combine baking powder, cornstarch, flour and cocoa; fold in briefly in batches. Spread on grease pan. Dry apples and spread evenly on top with the bulge facing up.
3. Beat 4 eggs and 50 g sugar until creamy. Stir through mascarpone, curd and custard powder. Stir into the egg mixture. Spread on the apples. Bake in a heated oven (electric oven: 175 °C / convection oven: 150 °C / gas: level 2) for 1 hour. Cool for at least 4 hours. Dust with powdered sugar.
