For the Enchiladas Tex Mex, first preheat the oven to 160 °C top/bottom heat.

Peel and finely dice the onion and sauté with the chopped chili peppers and garlic in a pan with olive oil. Then add the minced meat and fry it through. Gradually add canned tomatoes, kidney beans, corn and peppers.

Season with tomato paste, salt, pepper and cumin and simmer well. Add a little water if necessary.

In the meantime, wash endive, cut into fine strips and mix with sour cream, salt and pepper. Heat the enchiladas in the oven according to the package instructions.

Fill patties with the sour cream salad and meat-vegetable mixture and roll up. Add grated Emmental cheese if desired.

If you like, you can also sprinkle the enchiladas Tex Mex with the grated cheese and bake the whole thing in the oven for about 10 minutes until the cheese is nice and crispy.
