Instructions:

Turn the game meat, bacon and peeled onion through the fine disc of the meat grinder (or turn the game meat through from the butcher).

Rinse parsley, pluck, dry well and chop in a universal chopper. Knead the meat with the egg, breadcrumbs and parsley with a mixer, season with salt and pepper. Shape into flat steaks and roast in hot clarified butter on 2 or automatic heat 9 to 10 for 3 to 4 minutes on each side. Remove and keep warm.

Crush juniper berries in a mortar and fry heartily in the frying fat. Extinguish with the whipping cream and cook a little. Season well and pour over the steaks, bring to the table on the spot.

Serve with noodles, apple compote and Kronsbeermus.

Tip: Instead of clarified butter, you can also use butter in most cases.
