A bean recipe for every taste:

Cream butter until peaks form. Add salt and sugar, stir briefly. Add egg whites and again mix everything together well. Mix chocolate powder and flour, sift in.

Quickly mix everything together to form a dough. Shape into a flat rectangle, wrap in plastic wrap and refrigerate for thirty minutes.

Roll out the dough in portions of about 150g on a little flour with a rolling pin until it is 3mm thin. Cut out larger and smaller shapes (circles, hearts, stars). Arrange the cookies by size on baking trays lined with parchment paper. Leave to cool for ten minutes before baking.

Preheat oven to 200 degrees.

Bake the Guetzli in the lower half of the oven for 7-9 minutes (according to size). Cool on a rack.

For the filling, put butter, egg yolks and powdered sugar in a tall container. Add coffee melted in water. Beat everything with a hand mixer until fluffy. Pour into a piping bag with a small nozzle.

Pipe a little filling in the center of each of the large Guetzli. Cover with the smaller Guetzli. Decorate with coffee cream and beans. Keep cooled until serving. Dust with confectioners’ sugar, if desired, just before serving.

To prepare:

The ready-assembled stars taste best fresh. The unfilled Guetzli keep themselves in a well-sealable tin 1-2 weeks and fill each fresh.
