For the flour dumplings, boil plenty of salted water in a large pot. Melt the butter and briefly sweat the chopped parsley in it. Pour over the dumplings.

Season with salt and nutmeg. Mix with flour and hot water to form a compact dough. Adjust consistency as needed with either more water or flour.

Shape into dumplings with wet hands. Place in the boiling water and let steep until lightly boiling, about 12-18 minutes, depending on size. Lift out the flour dumplings and let them drain.
