For the pepper nuts, heat the honey (do not boil) and dissolve the granulated sugar in it. Allow to cool. Mix in the eggs, staghorn salt and spices. Finally, knead in the flour.

Let the dough rest at least overnight, but preferably for a few days.

Preheat the oven to 190 ºC hot air.

Cut the dough into 3-4 pieces and form a roll. Cut slices from the rolls and shape them into balls the size of walnuts.

Place the balls on a baking tray lined with baking paper and bake for 15 minutes.

While still warm, generously coat the peppernuts with egg white glaze.
