For the violet vinegar, shake out the violets well and clean them roughly. Then put them in a bottle with a large opening. Pour in the honey and then fill with the vinegar.

The flowers must be completely covered with vinegar. Now leave to infuse for about 2 weeks. Shake the bottle well 1 – 2 times a day.

After the infusion time strain the vinegar and store it well closed.
