For the rib meat, clean the pork ribs and divide them into pieces of any size.

Rub vigorously with salt, pepper and caraway seeds and leave to marinate for a good half hour.

In the meantime, cut the onions into large pieces and preheat the oven to 180 °C.

Fill a suitable roasting pan with a lid with about ½ liter of water.

Add the lard, onions as well as the peeled garlic cloves and arrange the ribs. Put the lid on and braise the ribs for about 15-20 minutes.

Then remove the lid and roast the ribs for another 20-30 minutes.
