Have fun preparing this mushroom dish!

1. cut the melanzani into small cubes.

Heat oil in a frying pan. Pour in melanzani and sauté over medium heat for 2-3 minutes, stirring frequently.

Add garlic, spinach, cumin and mushrooms. Season and make stirring 2-3 min. Fill mixture into cannelloni and place in a single layer in an ovenproof dish.

4. for the sauce, heat olive oil in a saucepan and sauté onion and garlic for 1 minute. Add tomatoes, sugar and chopped basil and bring to a boil. Reduce temperature and

simmer on low heat for 5 minutes. Pour the sauce over the cannelloni. 5.

Spread the sliced mozzarella evenly over the sauce and bake in the heated oven for 30 minutes at 190 °C /gas mark 5 until the cheese is bubbly and golden brown. Serve immediately.

Tip: You can cook the paradeiser sauce ahead of time and keep it in the fridge for up to 24 hours.

This dish is made with ready-made cannelloni. However, you can equally buy ready-made lasagna sheets and roll them up.
