Cut fine strips from the salmon and form a rose from these thin slices and drizzle with olive oil. Season with salt and lemon and gratinate briefly in the oven. For the sauce, finely grate an apple with peel and squeeze. Mix with finely chopped dill and yogurt and season with salt, pepper and lemon. Serve the gratinated salmon roses on the apple-dill yogurt.
