For the biscuit roll, beat egg whites with 40 g sugar and salt until stiff. Whisk yolks, 1 tablespoon warm water and 60 g sugar until foamy.

Add the yolk mixture to the beaten egg whites. Sift flour, cornflour and baking powder on top and fold in. Add the warm butter and fold in.

Preheat oven to 170 degrees. Place baking paper on a baking tray. Brush side edges with a little butter (or rest of melted butter).

Spread the mixture on top. Put in the oven for 20-25 minutes. Then turn out onto a kitchen towel. Warm apricot jam slightly (30 sec in microwave).

Add a dash of rum. Spread the jam on the biscuit dough. Then roll up with the help of the kitchen towel. Sprinkle with powdered sugar.
