Instructions:

Remove the peel from the cold potatoes and grate them with a rösti grater into a large enough bowl. Add the flour, salt and a little pepper. Stir everything well.

Heat the butter in a frying pan. Add the potatoes and let them color a little. Roast with the frying ladle on a low fire, stirring and turning continuously, until small balls form. (Depending on the size of the pan, divide the mixture and roast twice).

Serve:

Serve with a compote, or possibly with cheese.

With coffee (in case of compote) or possibly with wine (in case of cheese)
