For the spelt salad, soak the spelt in water and leave to soak for about 8 hours or overnight. The next day, steam the spelt on low heat in a closed saucepan for about 25 minutes and then leave to cool.

Peel the cucumber, cut it in half lengthwise and cut it into slices. Cut out the stem ends of the tomatoes and cut them into eighths. Clean the spring onions and chop them into rings. Pit the olives.

Mix cucumbers, tomatoes spring onions and olives in a large baking bowl. Add corn and cooked spelt kernels.

To prepare the sauce, mix the whey concentrate with water and herb salt, then whisk in the oil. Mix the sauce with the salad ingredients.

Chop the feta cheese into cubes and spread on top. Sprinkle plucked basil leaves and chopped and parsley on top and serve the spelt salad.
