For the eggs in bacon sauce, melt the butter in a saucepan, add the bacon and sauté lightly. Then add the flour, stir and let it sweat lightly.

Gradually add the vegetable soup, stirring constantly. Season the bacon sauce with salt and pepper, add the bay leaf. Leave to infuse for a while with the lid on.

Bring the sauce to the boil again and slowly slide the eggs one by one into the boiling sauce. Lower the temperature and let the eggs cook in the sauce. Remove the bay leaf before serving.

Serve the eggs in bacon sauce.
