For the cranberry apple layer cream with marzipan macaroons first (about 40 minutes) soak gelatin in cold water, squeeze well, melt.

Clean apple, cut out core, quarter and cut into compartments, sprinkle with juice of one lemon.

Boil cranberries with brown sugar and cranberry juice, thicken slightly with a little stirred potato starch.

Whip the cream with a little sugar until stiff, mix with apple puree, stir in the gelatin.

Put some macaroons in a goblet glass, put a little bound cranberries on top, cover with apple whipped cream. Repeat everything again until the glass is filled to below the rim. Let the cream sit in the refrigerator for 120 minutes.

To serve, pour a mirror with cranberry syrup. Insert the apple fan into the cranberry apple layer cream with marzipan macaroons and garnish with mint crowns.
