For the Creole sauce, wash the young onion and chop finely. Remove seeds from chili pepper if necessary and also chop finely. Peel garlic and chop finely or squeeze.

Let the sugar caramelize. Add chili and green onion. Stir in all other ingredients, season to taste and let the Creole sauce reduce for about 5 minutes.
