These cupcakes are served with coffee on February 5, Johan Ludwig Runeberg’s birthday. Frederika Runeberg, the wife of the national poet, baked these tartlets, but the jam is said to have been added later.

Beat the egg with the sugar until creamy. Whipped cream, cooled butter, flour with baking powder, finely chopped almond kernels and breadcrumbs stir with egg-sugar foam. Finally, add bitter almond oil.

Attention: In no case use more bitter almond oil.

Grease high round molds well (do not grease paper molds) and fill 3/4 full. Bake at 175 degrees for about 20 minutes.

Cool slightly. On each tartlet 1/2 tablespoon raspberry jam mold, stir confectioners’ sugar and water and use it to pipe a circle around the jam.
