For the apple cookies, soak the apple slices in rum. Cream butter with sugar and gradually add eggs, rum, cinnamon, salt and lemon juice. Stir in the remaining ingredients.

Pour the mixture into a piping bag and using a smooth nozzle, pipe 14 to 15 mm mounds onto a prepared baking sheet with enough space between them. Leave to stand for 1 hour. Bake the apple cookies in the preheated oven at 165°C to 175 °C for approx. 12 minutes until light brown on sight.
