To make the mulled wine secco, bring the sugar to the boil once with the red wine, spices and tea bags.
Then simmer gently for 30 minutes until a syrup is formed that is not too thick.
Strain the syrup through a sieve and refrigerate in a bottle.
For the preparation of the mulled wine-secco, pour 3-4 tablespoons of syrup into a champagne glass, and top up with sparkling wine.
