Mix chiles, mustard seeds, peppercorns, allspice seeds, dill seeds, and mace. Add cloves, bay leaves, cinnamon stick, and ginger. Tie into the vinegar solution for the pickle mold or possibly into a piece of muslin, which is removed after marinating.
