Grilled Bananas with Asian Caramel Sauce

Instructions:

Melt sugar in saucepan over medium heat until caramelized (not too dark). Remove saucepan from heat and stir in coconut milk.

Bring to a boil briefly to dissolve the caramel. Add cinnamon stick and lemongrass (pressed a little) and simmer on low heat for 10 minutes. Melt maizena (cornstarch) in water and stir in. Remove and discard cinnamon stick and lemongrass. Refrigerate sauce.

Preheat broiler. Remove skin from bananas and cut into quarters (cut 1 lengthwise and 1 diagonally). Coat in coconut milk and sugar. Grill for approx. 6-10 min. over medium heat.

Serve with caramel sauce and vanilla ice cream.
