For the cherry buns with cinnamon, sift flour into a bowl and crumble in yeast. Add salt, sugar, THEA, milk and egg. Knead into a smooth dough and let rise, covered, in a warm place until doubled in height.
On a floured work surface, roll out dough 36 x 25 cm and spread with cherry jam. Sprinkle with crumbs, nuts and cinnamon, spread cherries on top and roll up tightly from the long side and cut into 2 cm thick slices.
Let rise for 10 minutes. Place the cherry buns on a baking tray lined with baking parchment and bake at 190 degrees on the second rack for 15-20 minutes. When cooled, sprinkle the cherry buns with cinnamon and powdered sugar.
