For the curd cheese soufflé, separate the eggs and beat the egg whites until stiff. Beat yolks, soft butter and powdered sugar until creamy. Squeeze lemon and orange and grate the peel.

Add lemon zest, orange zest, lemon juice, orange juice, curd and vanilla custard powder and mix well. Gently fold in the snow, mixing in the raisins as desired.

Pour the batter into a greased baking dish and bake in the oven at 180 °C top/bottom heat for about 45-60 minutes.

Arrange the curd cheese soufflé and serve.
