Very neatly clean the spots with a kitchen knife, rinse in warm water and soak for a few hours cooled.
Then put in boiling water, bring to a boil, pour cold water, cool and drain. Place in cold salted water and boil until tender.
Make a hearty clear soup from the beef and cleaned greens.
Add the patties cut into strips and boil for a while longer. Take out the vegetables, chop them like the patches and add them again to the saucepan.
Bind the patches with a roux of butter and flour.
Season hotly with the ground spices.
Arrange in soup plates and serve with white bread.
