For those who love strawberries:

Warm butter in a frying pan, sauté shallot in it. Raw sauerkraut, squeezed, steam for about five minutes. Add vegetable broth, bring to a boil, reduce heat, simmer with lid on for about 40 minutes until soft.

Mash the vegetables with the liquid, pour back into the pan. Add juniper berries, coarsely crushed, pour in cream, let simmer, reduce temperature. Season with salt and a little pepper as needed, continue to simmer for five minutes.

Serve, garnishing with a few juniper berries, coarsely crushed.
