Instructions:

Mix all ingredients except butter and water in a baking bowl. Rub in the butter and gradually add the warm water. Knead and mix constantly until a smooth elastic dough is obtained. Cover with a wet dish. After at least half an hour, heat a heavy frying pan over medium-low heat. Form 12 balls of the same size from the dough and roll them out. Fold in the middle and roll flat one more time, as for the paratas. Put a besanroti on the hot frying pan and roast it for 2-3 minutes. Use a little bit of ghee in case the roti sticks to the frying pan. Then, using the back of a spoon, spread 1/1 tsp of ghee on one side. Repeat the same with the other side. The besanroti is done when both sides are golden brown and speckled with reddish spots.
