For the cheese and ham croissants, place the dough triangles on the surface, score the short side 2 cm deep. Cut ham and cheese slices in half. Place 1/2 slice ham and cheese on each triangle. Cut 1 slice of cheese into small cubes.

Starting from the scored side, roll triangles over filling toward the top. While doing so, pull the dough corners apart a bit and shape into croissants.

Mix the egg yolk with 1 tablespoon of water and brush the croissants with it. Place on a baking tray lined with baking paper.

Sprinkle with the cheese cubes and bake in a heated oven at 200 degrees (convection oven 180 degrees) on the 2nd rack from the bottom for 10-15 minutes until golden brown.
