Instructions:

Squeeze the tangerines and mix with the lemon juice and the preserving sugar, grate in the lemon zest. Halve the vanilla pod and scrape out the pulp, add to the fruit mixture.

Bring the fruit mixture to the boil and boil for 5 minutes until bubbling, add the gin and immediately pour into clean jars and seal.
