For the spaghetti with pumpkin sauce, cut the leeks into rings. Peel and coarsely grate the pumpkin, if necessary, and quarter the tomatoes. Heat sesame oil in a pot and sauté leek in it.

Add the pumpkin and sauté briefly. Pour in the coconut milk, add a little salt and let it steam for 10 minutes. Add the tomatoes and continue to steam for another 5 minutes.

Season with salt and pepper. Preheat oven to 180°C grill function. Coarsely grate the halloumi. Line a baking tray with baking paper, spread the halloumi grates on it and grill under supervision in the oven until golden brown.

Let cool briefly and break into small pieces. Cook the spaghetti according to the package instructions, mix with the pumpkin sauce and serve sprinkled with the grilled halloumi.
