Make the potatoes and cool for about 120 minutes and tie a little bit. Only then peel and cut into narrow slices. Blanch (scald) the tomatoes with boiling water, rinse, skin and remove the seeds. Cut them into centimeter cubes. If they are small cocktail tomatoes, you can also use them with skin, simply cut in half.

Mix wine vinegar, olive paste, salt and pepper to make a marinade, stir in the tomatoes and finely chopped spring onions, and finally add the potatoes.

Serve the salad on its own as a snack. It goes well with roasted or grilled lamb chops.
