Cheese filling and choux pasta rings can be prepared. Fill them before serving. Boil a quarter of a liter of water with butter and salt. Add the flour all at once and stir until the dough is smooth and shiny and easily separates from the bottom of the pot. Remove the saucepan from the stove.

Fold in the eggs a little at a time. Cool the batter and place in a piping bag fitted with a large nozzle. Pipe two large rings in a zigzag pattern onto a baking sheet lined with parchment paper. Sprinkle with sesame seeds. Bake at 200 °C in a heated oven for half an hour. Cool down.

Cut the ham into small cubes. Chop the kitchen herbs. Slice the radishes. Mix cream cheese and curd cheese with a few tablespoons of milk.

Mix well and season with salt and freshly ground pepper. Cut the ring horizontally. Fill with the herb cheese.
