Try this delicious noodle dish:
Soak a spring roll wrapper in warm water for a few seconds and place it on the surface. Place a lettuce leaf on the bottom edge, a few lettuce strips on top, soybean sprouts and cooked rice noodles on top. Lightly press on this filling with your hand to flatten it a tiny bit. In front of the filling, place 3 crab tails lengthwise in a row. Wrap the two outer sides of the shell inward. Now fill lengthwise with 2 stalks of chives. Roll up the parcel. Place on plate with the seam facing down. Bring to table with sauce (as a dip in a dessert dish).
Important: Spring roll wrappers made of rice paper must always be kept wet during processing, otherwise they become brittle. So while rolling up, sprinkle with a little bit of water continuously.
