Cut the meat into cubes and turn 4 times through the grinder (fine slice). Add the spices and knead to a smooth dough with moderate addition of milk. Season in between. (It is best to fry small portions of dough briefly in a frying pan.) Cut the cheese into cubes and mix with the dough.
Fill the quantity loosely! into casings, draw in boiling hot water for 5 min. and then grill – or freeze.
Makes about 30-35 sausages.
Our tip: As an alternative to fresh herbs, you can also use frozen ones – they also stand out for their fresh taste!
