Cut off the outer hard leaves from a large or two small heads of cabbage, split the heads in the middle, and remove the cods and larger leaf veins. Cut or slice the cabbage into fine or coarse noodles as you like, wash it and steam it with a tablespoon of finely chopped onion in hot fat for a quarter of an hour.

Then add salt, pepper, a little caraway, beef broth as needed, two tablespoons of sugar, five tablespoons of vinegar and a glass of wine, cover the cabbage thoroughly and stew it until it is soft.

A quarter of an hour before serving, it is dusted with two spoons of flour, a little beef broth is added, the cabbage is then briefly boiled down, and served with pork, sausages, or buttered pastry.
