A great pasta dish for any occasion:

Sift the flour into a large baking bowl and sprinkle with salt. Make an indentation and sprinkle or crumble the yeast into it, stir with half of the milk. Sprinkle a little flour on top and let rise in a warm place with the lid closed for 15 minutes, until cracks appear on the surface.

Work butter, steam, flour and remaining milk into a dough. Continue hearty kneading for about 10 min until dough is elastic and no longer sticks. Cover and rise in a warm place repeatedly for 20-30 min. until doubled in volume.

Clean spring onions, cut diagonally into rings, sauté briefly in a tbsp. of fat.

Mix flour, yogurt, egg yolks and both cheeses, season heartily. Whip the egg whites until stiff, fold in.

Preheat stove to 200 °C.

Grease a cake springform pan (28cm), roll out 3/4 of the dough on the floured work surface. Line the bottom and entire sides of the pan. Cut ham into strips, spread evenly on the dough with the onions. Pour in the cheese mixture and turn the edge of the dough inward, decorate nicely with the remaining dough. Spread remaining fat evenly on top in flakes.

Bake in the oven for 1/2 hour.
