For the lentil and vegetable soup, cut the soup vegetables into small pieces and the leek into rings. Heat the coconut oil in a saucepan and add the leeks and sauté briefly.
Add the rest of the vegetables and stir-fry a bit. Add the lentils and deglaze with the water. Add the soup spice paste and bring the soup to a boil.
