Rinse the meat and dry with kitchen towel. Beat lightly. Season on one side with salt and pepper.
In a cup, mix the paradeis pulp and the parmesan cheese. Add the crushed tarragon and mix well.
Coat the meat with the mixture and roll into roulades. Fasten with skewers or string.
Add the onion and the meat to the hot oil and fry until lightly brown on several sides. Extinguish with red wine. Then add the water and simmer for 30 minutes.
Thicken the sauce a little (a little flour in cold water). Spiral noodles go well with it.
