First remove the remaining small bones in the fillets with tweezers. Then rinse the fillets when cold, dry them and place them skin side up in a shallow dish.

Coarsely pound the star anise with the coriander seed and peppercorns in a mortar. Mix the spices with salt and sugar. Coarsely chop lemongrass and coriander and with to the spices form, this mixture on the fish fillets form.

Drizzle mixture of oil, honey and lime juice over the fish. Now marinate the fillets covered for 4 hours (not longer!) in the refrigerator.

To serve, remove a tiny bit of the marinade from the walleye fillets. Slice fish from skin and bring to table.

Tip: Stock up on a variety of high-quality seasonings – it pays off!
